Hi everyone, today I am going to show you how to make Japanese style stir fry burdock root. It is very easy to make.First, let’s prepare the burdock root. Since the skin is very thin, just use a spoon to remove the skin. But the texture of burdock root is rough. You need to cut it as thin as possible so that it will taste better.Here is a method to cut thin strips. First, use a sharp knife to make several cuts on the burdock root. Then use a peeler to peel the part that we just cut. You will get thin burdock root strips. Repeat the process when the cuts become shallow.
Prepare a big bowl with water and 1-2 tsp white vinegar. Soak burdock root strips in the water to prevent them from turning brown. If the burdock root is not fresh, discard the middle part because it is lignified and tastes rough.Now let’s prepare carrot. Cut it into slices. Then cut it as thin as burdock root strips.Heat oil in a pan. Crush garlic cloves using garlic press. Fry for a while and then add in burdock root strips. Next add in carrot strips. Cook on medium heat.Add in 2 tbsp mirin and 1 tbsp sake. Cook a while to let alcohol evaporate. Add 2-3 tbsp soy sauce. Cover with lid and cook for 10 minutes. Finally add in 1 tbsp sugar and 1 tsp sesame oil. Turn off heat. Add in 3 tbsp white sesame seeds. Now it is done.Serve it on a plate. Sprinkle some white sesame seeds on top. It can be served hot and cold. The burdock root has a fresh smell. Cook it together with carrots and white sesame seeds. The sweet seasonings bring out the flavor.
